Why Potato Chip Packaging Is Filled with Nitrogen Gas

We all know that potato chip packaging is typically filled with nitrogen. But why nitrogen instead of other gases?
My understanding is as follows:
  • It helps protect the chips from being crushed during transportation.
  • Nitrogen is chemically stable at room temperature and relatively inexpensive. It helps inhibit the growth of aerobic bacteria and reduces the risk of food spoilage.
  • As an inert gas, nitrogen does not react chemically with the food itself.
  • It provides excellent protection against moisture and oxidation, helping to maintain freshness and extend shelf life.

It's totally correct.
The key point is that nitrogen can protect the products from crushing and oxidation.
Nitrogen is not only used in potato chip packages, but also in some products like bread, frozen dried fruits, high-level nuts(cashew, Macadamia Nut, pistachio, and so on), biscuits, popcorn, shrimp crackers, and so on.
Also, some coffee needs nitrogen flushing, too. Because roasted coffee will release carbon dioxide, and roasted coffee is easily oxidized in air, nitrogen flushing will replace the air in the package, protecting the aroma very well.
