We all know that potato chip packaging is typically filled with nitrogen. But why nitrogen instead of other gases? My understanding is as follows: - It helps protect the chips from being crushed during transportation.
- Nitrogen is chemically stable at room temperature and relatively inexpensive. It helps inhibit the growth of aerobic bacteria and reduces the risk of food spoilage.
- As an inert gas, nitrogen does not react chemically with the food itself.
- It provides excellent protection against moisture and oxidation, helping to maintain freshness and extend shelf life.
