My paper bags have dark, wet-looking spots on them after 2 weeks.

This is common in Kraft Paper bags. Coffee beans and nuts release oils. If the inner plastic liner is low density or the lamination is weak, the oil migrates through the plastic and stains the outer paper layer. The bag looks wet and dirty on the shelf.
